How we make it
Our Syrah grows at 650 metres on the slopes of Mount Vermio. We pick it in the first two weeks of September and bring it straight to our winery at Trilofos, where we destem it and keep it cold in a stainless steel tank for ten days. The must then goes into our 225-litre oak barrels, where it ferments slowly and matures for 24 months. We rack the wine off its lees, let it settle for two weeks and bottle it unfiltered, so please decant it.
Taste it here
We pour the 2016 by the glass at our restaurant.
It is part of our wine flights: Florian's Signature.
