The two things only we do, in six bottles to taste in pairs. Grapes fermented together: Terzetto (Assyrtiko and Malagouzia pressed together), and Symphony Rosé and Symphony (Syrah, Agiorgitiko and Xinomavro from one field, fermented together). Greek oak: Assyrtiko Fumé and Sauvignon Blanc Fumé finish fermenting in 300-litre casks; Syrah Barrique 2016 spent 24 months in barrels, unfiltered. Pour Terzetto beside Assyrtiko Fumé, the same Assyrtiko without and with oak, and Symphony Rosé beside Symphony: one field, two colours.
