Assyrtiko and Malagousia are grown separately, each on their own carefully chosen field. Both are hand-harvested on the same day, then destemmed and pressed together to ensure the aromas of both varieties develop into ONE wine, which is slowly fermented in temperature-controlled stainless steel tanks.
